Chunky Ham and Vegetable Broth

Serves six


1kg Australian ham bone or ham hock

10 cups water

2 sticks celery, sliced

2 carrots, peeled and sliced

1 onion, finely chopped

cup barley

1 leek, sliced

1 zucchini, sliced

2 potatoes, peeled and chopped

2 turnips, peeled & cubed

salt and pepper to taste

cup parsley finely chopped to garnish

crusty bread to serve


Place the ham bone and water into a large saucepan and simmer for 1.5 hours. Prepare vegetables.

Remove bone from the pot and tease the meat from the bone and chop into chunks.

Return the meat to the pot along with barley and prepared vegetables and simmer for an additional 50-60 minutes until barley is tender.

Season to taste and garnish with parsley. Serve hot with crusty bread.
