Gourmet Mushroom and Parmesan Pizza

Makes one.


1 cup self-raising flour

cup natural yoghurt

2 tbsp tomato paste

cup grated mozzarella cheese

1 cup mixed gourmet mushrooms, sliced if large

1 tbsp raisins or muscatels

shaved parmesan cheese, to serve

truffle oil, to drizzle (optional)


Sift flour into a bowl, make a well in the centre and stir in yoghurt until mixture forms a soft dough. Turn onto a lightly floured surface and knead until smooth. Roll pizza dough out to a 28cm circle.

Spread tomato paste over pizza base. Top with mozzarella cheese, mushrooms and raisins. Bake at 200°C for 15-20 minutes or until golden brown.

Serve sprinkled with shaved parmesan and drizzled with truffle oil.
