Black Pepper Bacon Brekkie Bowl

Serves: 1-2

Ingredients:

an avocado

40g haloumi cheese

2 cups of chopped kale

2 free-range eggs

2 rashers of Primo Premium Selections Black Pepper Bacon

1 tbsp avocado oil

juice of a quarter of a lime

lime wedges, to serve

1 pinch of sea salt

1 tbsp dukkah spice

Method:

Halve the avocado, gently removing one half. Slice into even strips.

Add the bacon and haloumi to a hot pan. Cook bacon until crispy and haloumi until brown on both sides.

Cook eggs your way. Massage the kale with avocado oil and a pinch of sea salt.

Place all ingredients in a bowl and sprinkle with lime juice, sea salt and dukkah.
